Mango Bread

Found in an old cookbook, it didn't fully bake in a loaf pan long after its baking time. So I use a 13x9x2" pan, cut like cake, and serve with vanilla bean ice cream. Mango juice can usually be found in the Asian food section. Make sure your mango is fresh and ripe.

    Preheat oven to 350 degrees.

    Grease a 13x9x2" pan.

    In a large bowl, combine flour, sugar, cinnamon, baking soda, and salt.

    In a medium bowl, combine vegetable oil, mango juice, eggs, vanilla, and honey.

    Slowly add liquid ingredients to dry ingredients and mix well.

    Stir in pureed mango.

    Fold in diced mango and nuts.

    Pour into pan and bake for 50-60 minutes.

    Cut into pieces and serve warm with ice cream.
