A Jewish bar cookie, like biscotti.

SERVES 6 -8 , 20 -30 cookies (change servings and units)

Ingredients

  • 3 eggs
  • 1 cup oil
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 3 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons orange juice concentrate (optional)
  • nuts (optional)
  • dried fruit (optional) or raisins (optional) or dried berries (optional)

Directions

  1. 1
    Mix oil and sugar together. Add eggs, and vanilla.Optional: add OJ and mix.
  2. 2
    In a separate bowl, combine dry ingredients, and add to wet. Mix to form a dough. (If dough is too sticky, add more flour.)

    Add chips.Optional: add nuts or raisins or dried berries.

    Form 2-3 loaves, and place on ungreased cookie sheet. Bake for 30 minutesat 350 degrees.

    Slice while hot.

    For a crispier cookie bar, return sliced pieces to oven for 10 minutes.

    For fancier cookies, drizzle melted chocolate over bars when cool.

    excellent recipe-I made 2 loaves with extra choc chips ( left out the orange juice and fruit-I also decreased the cinnamon to 1 tsp since I thought 2 were too strong). It took 1/2 hour to cook 2 loaves. will make again-Thanks Chef Susan B.
