Mama's Best Macaroni and Cheese

My kids say this is better than 'the blues' and gobble it up, even when I toss in a handul of cooked veggies like broccoli, peas, carrots, etc.... It is just as easy as the 'blue box' at least I think so and it is much healthier! World Tour: would fit British, Canadian and SW catagories.

SERVES 6 (change servings and units)

Ingredients

Directions

  1. 1
Make a ‘roux’ by melting butter in pan and adding flour. Stir constantly and cook until it is the color of caramel candy. It burns easily so stir stir stir!
  2. 2
Slowly and carefully add milk while stirring.
  3. 3
When milk starts to steam add cheese and seasonings and stir until melted and well combined.
  4. 4
Pour over cooked macaroni noodles and serve.

Wow! I cut the recipe in half for DH and I and what a mistake...I could have had the leftovers for lunch. This was very good and the only thing I did differently was to add some sauted minced onion and about 1/2 cup of colby cheese. This will be a regular in our house. Thank you. Made for Zaar Chef Alphabet Soup Game (July-Dec. 09).

This was good and the kids loved it. I think I would like it to be cheesier, though.

Yummo!! Simple and easy to make, and so delicious! My 6 year old ate the whole plate, so that tells me this is a 5 star right away. I used whole wheat rotini noodles and scaled the recipe down in half. Turned out perfectly and creamy. Sometimes home made mac and cheese recipes can be a little grainy, but not this one. Thanks for a terrific recipe Hope!

My kids love the "blue box"; I can't stand it, so I'm very happy to find this easy kid-pleasing recipe! I used tri color rotini, since it was leftover. It was delish, with enough cheese sauce to please our wisconsin cheese loving taste buds! Thanks!
