Lunch Box Fillers - Carrot Stix

More for reference than culinary flair. I put these in my lunch box every day. I like to change the dip occasionally. I'll be adding more ideas for dressing as I find them.

SERVES 1 (change servings and units)

Ingredients

  • 100 g carrots
  • 2 tablespoons sweet chili sauce

Directions

  1. 1
    Depending on the state of the carrots either peel them or scrub them.
  2. 2
    Slice the carrots into batons. For a fun idea to make kids eat their veggies use mini cookie cutters to cut out shapes from thin discs of carrots.
  3. 3
    Place the sweet chilli sauce in a small container and the carrots in the lunchbox.
  4. 4
    Eat at some point.

    You know, I've packed carrot sticks in the kids' & hubby's lunches for years, just NEVER once thought to put in some DIP for 'em (not more than a few times, that is). So, thanks for reminding me to do this. We took some today on our little picnic, Ranch dressing for DD and Western dressing for moi! Ymmyyy!~!!~ *Made for My Three Chefs - June 2007*

    My kids love carrot sticks with Ranch dressing as long as I don't give it too often! I buy the bags of mini carrots already prepared so it's easy to throw them into a snack size ziplock bag.
