Lower Fat Chiles (Chiles) Rellenos Casserole

You know the John Wayne Chile Relleno casserole? The rich, eggy, cheesy one that everyone always loves? Well - it's yummy but it's fattening! Here's a delicious lower fat variation that yields a similar casserole with no guilt! Utilizes reduced fat cheese, sour cream and egg substitute for pretty darn good results!

SERVES 6 (change servings and units)

Ingredients

Directions

    Spray a large deep dish pie pan, or a deep square baking pan with Pam.
  2. 2
    In a mixing bowl, combine 1 cup cheese, milk, egg, tortillas, chilies, salsa and salt.

    Mix well and pour into pan.
  4. 4
    Bake at 375 about 30 minutes until set.
  5. 5
    Sprinkle remaining 1/2 cup cheese and cilantro over top and bake another couple of minutes until cheese is melted.

    Serve with a dollop of sour cream.

My hubby and I have never tried John Wayne's version, but we really liked this! We followed the recipe to a T, and thought it was very filling, and not heavy at all. We did add some Chipotle Tabasco sauce on top, and boy oh boy, that was awesome! I think that next time we try this, we'll use hot chilies and add the tabasco to the mix before baking. Also, I didn't know whether or not to drain the chiles, so we drained 1 can's worth, maybe next time we'll drain them both. Thanks for posting!

    I was unsure at first since I love Chile Rellenos, but this recipe was delicious. I added HOT green chilies and salsa. And O doubled the cheese and corn torillas for more texture. This was a great treat. I also made Simple Tex-Mex Rice to go along with it. They were wonderful together! They are even better the next day for leftover lunch. Thanks for posting!

    SaraFish, this makes a very nice substitute casserole for the John Wayne version. I have made this twice now, and we have enjoyed it both times. The only substitution I made was to add frozen New Mexican chilies instead of the canned ones. I only wish that the nutritional facts were current. Thanks for sharing this lovely recipe.

    This is a wonderful and easy to prepare recipe. Thank you for posting it. I really enjoyed it. I added some mushrooms and sprinkled some mexican seasoning on the top with the remaining cheese. YUM! I will be looking foreward to leftovers for lunch during the work week.
