This recipe was originally posted by a Zaar member who is no longer active. When she left, this recipe went "up for adoption." Since I was a huge fan of Zenith and her recipes, I of COURSE leapt at the chance to adopt one of her wonderful healthy recipes. These have no added fat and will make a satisfying breakfast snack. Enjoy!

Directions

    Soak oats in milk for 1 hour.
  2. 2
    Combine all ingredients in a large bowl.
  3. 3
    Spoon into a muffin pan that has been lightly greased or sprayed with nonstick spray.

    Bake at 400 F for 20-25 minutes.

    Variations: To make Oatmeal Raisin Muffins, Oatmeal Apple Muffins, or Oatmeal Chocolate Chip Muffins, add raisins/chopped apples/chocolate chips to the batter.

I made these last night using a fresh apple that I ran thru the food processor. I added cinnamon and a little nutmeg, and used one whole egg. They turned out very well. I enjoyed that they were tasty and healthy! Thanks for the recipe.

    This is a great healthy muffin recipe that I don't mind making for my kids! I did add a handful of chocolate chips, to add a little sweetness. But that's the beauty of this recipe. So versatile! You could add nuts, berries, chocolate, raisins, vanilla, cinnamon, you name it! My only complaint, and the reason I did not rate it 5 starts, is that they stick really really badly to the muffin papers I used. Maybe next time I will skip the paper liners, and grease my muffin pan really good. Thanks for giving me an excuse to make muffins more often! Oh! I almost forgot. I did add about 1 Tbsp to the milk and oats so there was a bit of acid for soaking. Otherwise, I followed the recipe exactly!

    These were fabulous muffins. I will be making them again. Low fat but moist. Adaptations: I used 1 whole egg rather than 2 egg whites, spelt flour instead of wheat flour, and I added walnuts and raisins. Great recipe. Thank you for sharing it.

    Nice, virtuous breakfast food! I did add some nutmeg and cinnamon, and a few raisins, which I soaked with the oatmeal in advance. I believe they come out to 2.5 WWpoints, 2 if you make them into 12 muffins, as I put mine in a square pan, and cut into 9. I chose this recipe for my husband, who told me he wanted to eat something with oatmeal, and he likes it, he did say he wanted additional stuff in it, like the raisins, which I agree with. And it is so good for you, all of that whole wheat flour and oatmeal, why not!
