Low Fat Country Turkey Loaf

A very tasty alternative to beef meatloaf. My family loves this recipe. They don't even realize that it is good for them, low fat and sneaks in a serving of vegetables.

SERVES 6 , 1 loaf (change servings and units)

    Preheat oven to 350°F Grease a shallow baking pan; set aside.
  2. 2
    Dice the carrots, onions, mushrooms and red peppers.
  3. 3
    In a large bowl, combine turkey, carrot, onion, mushroom, bell pepper, tomato sauce, soy sauce, bread crumbs, egg substitute, garlic powder, salt and pepper; mix well.

    Shape turkey mixture into a loaf in prepared pan. Bake, uncovered, for 1 to 1 1/2 hours or until cooked through and starting to brown. Let stand several minutes before slicing.
