Low Fat Chocolate Chip Banana Muffins

SERVES 12 , 12 muffins (change servings and units)

Ingredients

    Mash bananas.
  2. 2
    Add remaining ingredients except chocolate chips and mix.
  3. 3
    Add chocolate chips and stir (I start with the 1/2 c and add more if it looks like too little.).
  4. 4
    Pour into grased muffin tins and bake at 350 for approx 15-20 minutes (until toothpick comes out clean).

This is a great recipe! I've made two batches in one day. Very easy, very quick and very satisfying. Here's some changes I made though; I used brown sugar instead of regular, I added half teaspoon of cinnamon for extra punch, I got good quality dark chocolate (70%) which I pounded to make chunks that are little bigger than ready choc chips and I added half cup of chopped walnuts that gave it great texture. I'm already getting requests for more batches!

    Super!! These were really delicious!! And they didn't taste low fat at all! I've recently made a lot of changes to my family's diet, and therefore I'm always on the look out for healthier versions of the foods we love. This was a total hit! It is a healthy option without tasting healthy! Thank you!!!

    Wow, these are sooooo delicious. I mean Bed & Breakfast delicious! You would never guess that they are low fat! I had some overripe bananas and didn't want the typical banana bread again. These are really, really good and plenty sweet. I found I was out of whole wheat flour so for the texture and fiber, I added 1 cup of regular flour, 1/4 cup oat bran and 1/4 cup of flax meal. Turned out so good I may just do that again next time. I think the chocolate chips are key in making these so yummy. Be sure not to skip them! P
