Low-Fat Bisquick Oven Fried Chicken

I make this about once a week at our house. All three kids like it (and hubby too) and it is one of my own favorites as well. It's such a great alternative to the heavily-fried chicken, but I'm telling you...it tastes JUST as great!

SERVES 4 , 2 pieces each (change servings and units)

    Place butter in 13x9 pan. Preheat oven to 425°F and place pan and butter in oven while it's preheating.

    Combine Bisquick, paprika, salt, and pepper in a large resealable bag.
  3. 3
    Skin chicken, if desired. Rinse each piece under cold water. Then place in bag, one or two pieces at a time, and shake to coat well.

    When butter is melted in pan (pan should be hot), place meat in pan, meaty sides down.

    Bake 35 minutes; turn pieces over and bake an additional 10-15 minutes or until internal temperature reaches 160°F.

    Excellent with mashed potatoes, biscuits, and green beans!

This was really good. For the short time I have been cooking, I never thought of using bisquick for making oven fried chicken. I will be difinately be making this again.

    Thanks so much for posting this! This will become a regular in our house - everyone loved it. The only change I made was adding garlic powder, and onion powder.

    Very good; made for a quick and easy dinner to prepare. I used 2 whole leg quarters (2 1/2 pounds) to serve 2 adults and 1 child. I too, added a pinch of garlic powder, oregano and basil to the mix, as well as a pinch of marjoram, dried parsley and savory. I used butter; the coating was buttery and light and the chicken moist. I served this with stuffing, gravy, green beans, corn and rolls. Thanks for posting!

    This was excellent! I added a pinch of garlic powder, oregano, and basil to the Biquick and other spices and sprayed a foil-lined pan with cooking spray. Then I lightly sprayed the chicken - I used boneless, skinless breasts- with the cooking spray also. The chicken came out crispy and moist and was yummy! Thanks for sharing this,Debidoo!
