Easy and Yummy — 2 of my favorite things! I served it with spanish rice and Mexican Jumping Beans (south Beach Diet-phase 1 Friendly). Thanks for sharing!

This is my go-to recipe when I don't know what to make myself for dinner. I love it!

I had been craving for mexican for a week and thought this might curb the cravings! Boy did it! I used mild salsa, I flattened the chicken breasts sprinkled with taco seasoning and left in the fridge for an hour, I pan fried them until nearly cooked then popped the salsa and cheese on top and only did them for 7 minutes in the oven. I served it with sour cream on the side, steamed veggies and oven baked chips. Thsi will be a regular in our house.

We just started the SBD and both me and my boyfriend loved this one! I served it with a salad and Mexican Jumping Beans (Mexican Jumping Beans (south Beach Diet-phase 1 Friendly)). We will be having this again and again!
