I found this on a low carb website and it is very good. Sometimes I use the cinnamon, other times I don't. It tastes good even if you aren't a 'low carber'. The picture was taken using 2 lbs of beef stewing meat! Thanks for the comments to use 2 lbs, it's much better!

SERVES 8 -10 (change servings and units)

I love this chili! I did change some things. I bought Morningstar Recipe Crumbles to use instead of the 2lbs of ground beef (I'm a vegetarian) and it was delicious. I used two bags. Also, I left out the bay leaves and green pepper which I think improved the taste (personal opinion of course!) It's hard being a low-carb vegetarian so I'm crazy about this recipe. Thanks!

    in the interest of being fair I'm giving this a med score, I haven't made it yet but for all those who are missing the beans in your low carb chili, you can go to a health food store near you and pick up some black soy beans, they are low carb and high in fiber. I will be trying out this recipe in a day or two and I will be adding some in mine, like you, its just not chili without the beans

    I've been on a low-carb diet for what seems forever, and I'm SO sick to death of either loads of chicken or beef, cream-based dishes and/or hours of preparation, only to find that the results of all my efforts have been wasted. I can easily say this chili is THE single best low-carb meal I've ever made. As a matter of fact, it's the ONLY low-carb meal I could easily see myself eating every week! I'm not sure why some people complained about the cinnamon, but IMHO, the cinnamon is what makes the chili THE BEST! Not too overpowering, and all the spices just blend together beautifully. Even my fussy husband went back for seconds on this. Thanks for sharing this fab low-carb recipe.. it's a staple in our house now!

    I made this for my husband when he was on a low-carb diet. I couldn't stop eating it myself. I did not add the cinnamon and used fresh mushrooms.
