I adapted this from a salad recipe I received from the American Dairy Association. It's filling and nice for a light meal with a bowl of warm soup. I love that this salad is so flexible in allowing substitutions based on what you have on hand. Fat free and low fat dairy products have successfully been used in this. I try to avoid adding any additional salt to our meals, so you may want to sample the dressing before serving and see if you prefer to add some.

SERVES 2 (change servings and units)

Ingredients

Yogurt dressing

Directions

  1. 1
    Top lettuce with the tomato, onion, cucumber, avocado, bacon, egg, and cheese.
  2. 2
    Prepare yogurt dressing by combining all ingredients in a blender or food processor and pulsing until smooth.

    Drizzle dressing over salad and toss to cover.

Very good and healthy salad! I used iceberg and omitted the cuke-you gotta make your DH happy you know. Made for Theirs, Yours, & Mine game. Thank you Starrynews for sharing.

    This is a wonderful salad and dressing, I used iceberg lettuce and the only thing I had to leave out was the parsley as I had none. It was such a healthy dinner - made for Holiday Tag.

    The dressing really makes this salad recipe POP. I have salad's most nights for my supper and so the ingredients listed were ones I normally have on hand. I did add even a bit more than you have listed. What I especially love about the dressing is the honey. Perfect sweetness that otherwise would have been bitter. Loved it!!! Made for HolidayTag.

    Made for Potluck Tag. The main reason that I chose this recipe was for the salad dressing as I'm always looking for different dressing recipes to try. The dressing was so easy and tasted fantastic. I had it on salad that was similar, but excluded eggs and included cooked diced chicken and craisins (a salad isn't a salad without craisins). Thanks for posting this Starry!
