This sounds really good, it's from the Southern Living December '07 issue! I can't wait to try it. I think I will make my own mashed potatoes instead of frozen ones. Posting here so I won't lose the recipe!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Prepare potatoes according to package directions.
  2. 2
    Stir in spreadable cheese and next 4 ingredients; stir until blended. Spread mixture on bottom of a lightly greased 11x7 inch baking dish; top with cheddar cheese.

    Bake at 350°F for 25 to 30 minutes or until thoroughly heated. Garnish if desired.

    I used fresh potatoes, omitted the bacon, used half of the herb cheese called for, and then added 1/4 c. sour cream. The result was awesome! We had with sour cream chicken and they went great together!

    I used my own mashed potatoes for this in place of the packaged, something told me I should omit the bacon but added it anyway, that was a mistake, and also I did not care for the herb cream cheese flavour added to the potatoes, I might try this again without the bacon and a different flavor of cream cheese and definately less milk, thank you for sharing!

    I made these to go with our fried chicken. I did use the frozen potatoes as stated but I recommend using fresh ones instead. I also only used half of the garlic & herb cheese spread and it was plenty. Made for Zingo ZWT 4
