Lo Mein Like Evergreen

My fave Chinese restaurant has the BEST lo mein I ever put across my lips. It's simple, cheap, and very filling if you need that kinda dish. This can be made for literally pennies and everyone will appreciate this because it can be dressed up or dressed down. Cook and prep times approximate.

SERVES 1 (change servings and units)

Ingredients

  • 1 (3 ounce) package ramen noodles, any kind, because you won't need the packet

  • 2 teaspoons minced garlic (I use the jar kind to save time)
  • sesame oil (1-2 shakes)
  • 2 tablespoons soy sauce
  • 2 tablespoons oil
  • 5 baby carrots, sliced into matchsticks
  • 2 tablespoons onions, diced
  • 1 teaspoon creamy peanut butter

Directions

  1. 1
    Break noodles and boil in water for three minutes. Do not add seasoning packet. Drain when done and set aside in serving bowl.

    Immediately return pot to stove over med. heat. Add oils, soy sauce, carrots, garlic, onion, and peanut butter. Stir well and let cook for just a few seconds with a fork.

    Toss noodles back in and stir to coat; make sure noodles are well-coated and blended well with the garlic and veggies. Return to serving bowl and enjoy!

Like others have said, this is a very versatile recipe. I've added some sauteed cabbage and peas along with the carrots and onions and it gave it a nice crunch.

    This was quick and yummy. I used Tahini rather than peanut butter and used Rooster brand noodles. I will certainly make this again!

    I made this tonight twice. The first time I made it I thought it was a little dry so I added a little water. It turns out I forgot to add the plain oil, but I think the taste was still good, so if you want to reduce fat content try leaving out the oil, but not the sesame oil. The second time I threw in a handful of asparagus to cook with the noodles. Both ways this was a very tasty dish and cheap and fast to make. I did end up using some of the seasoning packet and we enjoyed it that way. This seems like a very versatile dish and I think you could add many different types of things to it. Thanks for the recipe.

    What a quick and simple recipe with staples I typically keep on hand. I added a little bit of left over steak, and it was delicious. I can see how versatile it is, to use any leftovers or veggies you have on hand. I think it would be wonderful with red bell pepper, or peas, too. Next time I'll add a little sambal oelek or some red pepper flaked to spice it up. Thanks for sharing this little jewel.
