Little Debbie Oatmeal Cream Pie

I found this on the web, and since they're the absolute favorite of my grandson, I made them for him. We couldn't tell the difference! The only thing is-these are a lot fresher!

SERVES 12 , 2 dozen (change servings and units)

Ingredients

Cream Filling

Directions

    In large bowl, cream margarine, sugars, molasses, vanilla, and eggs.

    Combine flour, salt, baking soda, and cinnamon.
  3. 3
    Add to the creamed mixture; mix in the oats.
  4. 4
    Drop dough by TBSP on ungreased sheets.
  5. 5
    Bake at 350°F.
  6. 6
    Bake for 10-12 minutes,or until just starting to brown around the edges.

    They will look moist; don't overcook.

    While the cookies bake prepare the filling.

    In small bowl, dissolve the salt in the hot water.

    Allow this to cool.

    Combine marshmallow cream, shortening, powdered sugar, and vanilla in med bowl; mix on hi until fluffy.

    Add the cooled salt water and mix well.
  13. 13
    Spread filling on flat side of one cookie, press 2nd cookie on top.

    With all the high reviews I was sure that these would come out better. They taste wonderful but the cookie itself is just way to thin and flimsy. Also I have to bake them until they are fully cooked since I am pregnant and I will tell you htat if you bake them until they are done then the edges get to hard and they stick to the pan. I had to double the filling for these. I was expecting them to be more fluffy rather then flat and crunchy.

    My little brother doesn't think the frosting is sweet enough, but these are amazingly close to the originals. They spread a LOT, so make sure not to put them too close together on the cookie sheets. Overall, it was a great recipe — they were easy to make and turned out great.

    These were out of this world - fantastic! I love the store bought ones, but these were even better. I used the Pampered Chef medium scoop and got 18 instead of 24, but that will vary! Will definitely make again.
