One day my friend at work brought this in for lunch. I turned my nose up at it, and laughed as she told me how delicious it was... The next day she made me one, and made me try it... I was hooked on the first bite...Try it...I bet you will get hooked too! I would not use black beans on this recipe. I use Friends or Bush's baked beans. Try some of my other delicious sandwiches: Linda's Tuna and Olive Sandwich (Sandwiches) or Finger Rolls Linda's Ham Salad Sandwich (Sandwiches) or Finger Rolls Linda's Egg Salad Sandwich (Sandwiches) or Finger Rolls

1 sandwich (change servings and units)

Ingredients

  • 2 slices bread, I use white
  • canned pea beans or canned navy beans, as many as you like, loaded about 1-inch thick. (out of the can or fridge, NOT HEATED, and drained of any extra juice)
  • mayonnaise, to taste
  • salt and pepper, to taste

Directions

  1. 1
    Put a generous amount of mayonnaise on both slices of bread.
  2. 2
    Add salt and pepper to taste, onto the mayonnaise.
  3. 3
    Put a generous amount of beans onto one slice of bread.
  4. 4
    Put top slice of bread onto sandwich, cut and eat.
  5. 5
    This is truly delicious.

    You just might like it.

    Note: You can add onion and/or bacon to this sandwich for variation, or how about chow chow or relish.

This was delicious! Because I am watching the waistline, I did make a few alterations in order to avoid using the mayonnaise. Instead, I used fat free cottage cheese I had pureed in a food processor (If you haven't discovered this low cal version of "mayonnaise", TRY IT NOW.) I spread the inside of a Napa cabbage leaf the mixture, added some red onion on top, and also plopped on there a dollop of hummus. YUM. Thanks!

    Who would have thought? This was a great sandwich that took no prep time. I am a bean lover so I thank you for a new way to eat beans!

    Loved this sandwich! I used home made beans right out of the fridge. Drained any juice before putting them on the bread. Then I added the mayonnaise to the top slice of the bread and added a thin slice of onion. Man, this was gooddddddd! I wasn't sure I was going to like this one, but decided to try it, because beans are a good way of getting in my protein. Now I have a new recipe for sandwiches, which is always a plus, especially if I like them as much as I did this one! Thanks Elaine

    Excellent recipe Linda! I made your recipe for Grammie Bea's Boston Baked Beans, and decided to make this sandwich for lunch at work. I used cold beans out of the fridge, and made sure I didn't use the juice. I did add the onion slice on top, thinly cut. I used a thin coating of mayo on each slice of bread also. What a great surprise as I bit into this sandwich. Don't let the simplicity of this recipe fool you. It really is excellent!
