Lime Chicken Soft Tacos

I love Mexican food and this is another one of my favorites. Lime and chicken are and excellent combination. I found it on the web. Thanks Marissa.

SERVES 4 (change servings and units)

Ingredients

Directions

    Saute chicken in a medium saucepan over medium high heat for about 20 minutes.
  2. 2
    Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano.
  3. 3
    Simmer for an extra 10 minutes.
  4. 4
    Heat an iron skillet over medium heat.
  5. 5
    Place a tortilla in the pan, warm, and turn over to heat the other side.
  6. 6
    Repeat with remaining tortillas.
  7. 7
    Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.

I loved the mix of flavors in this recipe. It was also very easy and quick to put together. We got 3 servings out of this. If my DD had been home it would not have been enough. Made for Summer Comfort Cafe.

    I had cooked chicken to use and tried this recipe with it. I did use more lime since I like the flavor it brings to Mexican food. I had all the things we like to put in tacos including avocados. Rice and pinto beans rounded off the meat with cold sliced watermelon for dessert. I think chicken made this was would also be great for OAMC.

    This was really good! The smell while cooking - garlic, lime, vinegar, yummy! I squeezed the whole lime because otherwise I'd probably just have to toss the other half. It made MUY tender chicken with an EXCELENTE light tasty flavor. And the soft flour tortilla was perfect with it, although could be served over rice too. I'll bet if you left out the cheese, it would be a lot less calories - and still mighty tasty. Ought to try this one, it's a goody!

    This dish was fantastic! It brings a fresh twist to an old favorite. I made it for my picky brother and gourmet food connoisseur father and both of them loved it. It's great when served with pita chips and guacamole or a simple rice side. Everything was very easy to make and the ingredients are always in our household. I'll be making this meal again very soon. Thanks a lot!
