Easy recipe. I'll have to try it.

    Rince the barley and drain.
  2. 2
    Boil water in a casserole and add the barley.
  3. 3
    Cover and cook 1 hour at low heat or until barley is tender and water is absorbed.

    Add olive oil and lime juice. Salt and pepper if you want and serve.

Super easy recipe and quite tasty. Next time I think I would add some cilantro as the flavour is quite basic. BUT the basic flavour is also great if you have a more overpowering main dish. Make sure to add enough salt as that makes a difference as well. I doubled the lime juice. The serving size is very generous, it could be cut in half and still make 4 servings. Made for Every day is a Holiday Tag.

    I love barley but I don't serve it by itself. This recipe is a nice way to add two simple ingredients to jazz plain barley up. I used quick barley so it only took 10 minutes to prepare. My husband and myself enjoyed this but the 3 little children did not find it as appealing as we did. One little girl, after announcing that she did not like it, changed her mind and declared, 'This is really good!'. I was going to add some Made for Gimme 5 2009 game

    This is a very nice alternative to potatoes or rice. The recipe was reduced to 2 servings and half a recipe actually made 4 servings. I did add some lime zest as well as the juice. While writing the review, I realized that I had left off the olive oil and didn't miss it all.

    This was a VERY NICE SIMPLE way to prepare barley. I used pearl barley. I only made 2 servings and it made a lot! The only change I made was to add lime zest at the end but it may be good cooked with it too. We enjoyed this with a citrus theme dinner. Made for Beverage tag.
