Lentils, garlic and tomatoes

I make this as a side with grilled chicken, a main dish for my vegetarian.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat the oil in a large 2 quart pot over medium heat.

    Add garlic and cook until JUST turning golden.
  3. 3
    Add tomatoes and cook down to thick, around 8 minutes.
  4. 4
    Add lentils and 2 1/2 cups water.
  5. 5
    Bring to a boil, cover and reduce heat.
  6. 6
    Simmer 30 minutes.
  7. 7
    Add the salt and lemon juice.
  8. 8
    Mix well.

I had never had lentils before but was searching for high fiber recipes to help my hubby's health. This was much better than I expected!0 (I did add one teaspoon of dried basil.) My fear of dried beans is lessened by the easy, quick keeper!

    This is a great side dish if you're trying to be healthy!! It was a little bland so I added 1 small onion, 2 tbsp herbs de Provence, and some fresh cracked black pepper. This dish is very versatile. You can change the spices up any way you want and it comes out great every time.

    This was a quick and easy recipe that has a BIG flavor. I did not have any fresh tomatoes so I added a 16oz can of diced tomatoes along with the juices and it added even more flavor. I also added a little bit of basil and cumin and of course, crushed pepper but thats because I like it hot!

    This was really delicious. The lemon juice is the winning ingredient in this recipe. I enjoyed this for lunch this afternoon with low-fat yogurt and bread, thanks for sharing! BTW, I followed Anu's suggestion and added more water as the lentils really soaked up the water pretty quick!
