Lentil Chili

A great throw-together lowfat meal. (2 WW points). Freezes well for make-ahead lunches. Sometimes I add garbanzo beans. This is from the Secrets of Lowfat Cooking cookbook, a great resource.

SERVES 8 (change servings and units)

Ingredients

Directions

    Combine everything (except tomato sauce and corn) in 2 1/2 quart pot and boil over high heat.

    Reduce to low, cover, and simmer for 25- 30 minutes.

    Stir in tomato sauce and corn.
  4. 4
    Simmer for 10- 15 minutes.

    Serve hot!

    Great garnished with lowfat sour cream.

    For Vegetarian use only the vegetable broth. Do not use the low fat sour cream garnish for Vegans.

Yum! Made this last night, my family LOVED it! My son ate his entire bowl, even my DD ate hers! I ended up omitting the corn, allspice and green pepper. I used dried minced onion, and I did NOT use the entire can of tomato sauce - it seemed like it would be too runny for us. One last note, I used beef flavored broth. Can't wait to have this again! Thanks Carianne!

    The whole family said definite 5 stars! I made this for the vegan in the house but everybody loved it and it's easy to make after work as well. The only change I made was that I used a can of diced tomatoes, rather than crushed, simply because I couldn't find a 16-oz. can of crushed tomatoes. I did use vegetable broth to keep this vegetarian. This is very tasty and makes a nice big pot, which is welcome in our household, we love leftovers. Thanks so much Carianne for helping me keep my household vegan alive for a while longer!

    Wonderful recipe. My husband LOVED it. Its very hearty... and it makes a lot!!! I added some other beans to it. It was delicious. We will make it again and again. Thanks.
