Lemon Trout Almondine

This trout dish has a wonderful lemony almond taste. It goes together real quick. Use fresh trout filets if possible. Delicious!

SERVES 2 (change servings and units)

Ingredients

Directions

    Sprinkle trout with salt and pepper.
  2. 2
    Dust the fish filets in the flour.
  3. 3
    Heat the olive oil and butter on medium high heat.
  4. 4
    Add fish filets and cook until light brown on both sides.
  5. 5
    Remove from pan and cover to keep warm.
  6. 6
    Return pan to heat and add 1 T butter.
  7. 7
    Add the almonds and saute, then add the fresh lemon juice.
  8. 8
    Heat it through, then spoon over the fish filets.
  9. 9
    Serve with additional lemon wedges.

    This was very good, simple and fresh tasting. It brought out the delicate taste of the trout, rather than overpower it. I cooked the fillets just on the flesh side, and they were nicely browned. Thank you for a delicious recipe.

    I liked it; my fiance thought that it was "wonderful" so based on that, I give it 4 stars. I like the crunch that the almonds give it. You really can't get any easier than this recipe.

    We had this using a trout my husband had caught in Tasmania (exceptional fish!)I browned the almonds in the oven first, and then added them and the lemon while the trout was still in the pan. I also added a 'dash' of white wine into the pan. It was delicious, with simple elegant flavours that complemented the fish. I serevd it alongside my 'chunky asparagus' and it was sensational!
