Lemon Squares

Here is a recipe from my grandmothers cookbook (1930's).

SERVES 20 (change servings and units)

Ingredients

Directions

    Preheat oven and lightly grease a 13 x 9 inch pan.
  2. 2
    Mix together butter, powdered sugar, 2 cups flour and salt.
  3. 3
    Pour into prepared pan.
  4. 4
    Bake for 20 minutes.
  5. 5
    Mix together eggs, lemon juice, sugar, lemon rind and 6 Tbsp flour and pour over the first part.

    Bake for 25 additional minutes.

    I made this last night, it was good but needed more lemon and less crust! next time I will double the lemon mix. and I added powdered sugar on top.

    I've never made lemon bars, and this recipe is outstanding. I put it in a jellyroll pan so there were more bars (48 of them!) and they were thinner. Perfect!
