Lemon Ice Box Pie (Frozen - Cracker Barrel Copycat)

I had the Lemon Ice Box Pie at Cracker Barrel, and was determined to find a copycat. I've adapted this recipe, and I think it fits the bill!

SERVES 6 (change servings and units)

Ingredients

Directions

    Mix sweetened condensed milk and lemon juice and beat on medium high speed until well blended.
  2. 2
    Fold in 1/3 of the whipped topping and 2 drops yellow food coloring.
  3. 3
    Pour filling into crust; carefully smooth remainder of whipped topping on top of lemon filling.
  4. 4
    Place vanilla wafer cookies around the edge of the pie (can do this right before serving if you prefer a crisper cookie).
  5. 5
    Cover pie and place in freezer.
  6. 6
    Pie may be kept in freezer for several days until ready to serve.
  7. 7
    Take from freezer 10- 15 minutes before serving.

I have missed the Pie at Cracker Barrel it was my favorite! This is so easy to make and taste just like it!! A cool refreshing dessert.

    My family devours this pie each time I make it. My DH was skeptical because he loves the traditional Southern Lemon Ice Box Pie you bake with meringue. However, he took one bite of this and said it was heavenly. He and the kids fought over the last slice! I have made it 3 times and will make it for a dinner party tonight. It looks (and tastes) great with crushed vanilla wafer crumbs sprinkled on top!

    I cant believe I didnt post a review for this. Ive made this lots since finding it. I was SOOOOO upset when Cracker Barrel stopped serving this. Thank you so much for getting me pretty darn close.

    I've been looking for a no bake one I used to make & this is very close. I love the taste of it frozen. I don't thaw it first, just slice & eat. I'm on my second lemon & have make 1 lime. Thanks so much for posting!!
