Lemon, Garlic and Basil Shrimp Skewers

Use this recipe as a template for other shrimp skewers. If you don't have honey mustard, stir a little honey into Dijon. Limes would also work well instead of lemons. And if you're finding your home-grown chives or parsley getting out of hand, substitute them for the basil. These need to marinate for 45 minutes before cooking. Recipe developed for Food and Drink by Heather Trim.

    In a medium bowl, whisk lemon juice with oil, mustard, garlic and lemon peel.

    Add shrimp and stir to coat.
  3. 3
    Marinate, covered and refrigerated, for about 45 minutes.
  4. 4
    Grease grill and preheat barbecue to high.
  5. 5
    Thread shrimp onto skewers and sprinkle both sides lightly with salt.

    Place on grill and barbecue until shrimp are pink, about 1½ to 2 minutes a side.

    Remove, place on a platter and sprinkle with basil.

    Reviewed during ZWT5 Caribbean visit for the Zaar CHow Hounds Quick and simple and the flavours were wonderful. I used fresh green/raw King Banana Prawns for the skewers. Served as an entree to a salmon main. Photo also being posted. Yum!

    Love such quick-to-prepare recipes, especially on a Friday night after a full-on week, and when they are as delicious as this one, I'm doubly, triply - or whatever - pleased. Just love shrimp with lemon and garlic flavorings and the inclusion of the honey mustard and the basil made for a superb blend of flavours. We thoroughly enjoyed this dish on a bed of Island Rice, which proved to be the perfect complement. I'll certainly be making this yummy dish again and really look forward to serving it to guests.     These were so tasty! And they were easy to do, too. I made them as written except that I used brown mustard instead of honey mustard. My ittle girl really like the shrimp this way. Thansk, Leslie!
