For a sugar free, low fat dessert, this is really good. Tastes just like lemon meringue pie filling. Be sure to use the cook and serve pudding mix, not instant.

SERVES 3 -4 (change servings and units)

Directions

    Add pudding mix to water and mix well.

    Bring to boil.
  3. 3
    Stir with a whisk until thickened.
  4. 4
    Add box of Jello and stir in well.
  5. 5
    Pour into individual dessert dishes and refrigerate until set.

    Top with fat free Cool Whip.

    Really good, I topped with fat free cool whip which you need to use sparingly since it has a slightly chemical taste at least to someone like me.....

    I tried this twice with instant pudding (with minimal luck) before i figured out what i was doing wrong (instant pudding doesn't dissolve and makes it really lumpy, but otherwise ok). When I finally used the right ingredients it turned out delicious! I made two in a row, one lemon and one strawberry, both of which were absolutely YUM. I am gonna try to find cheesecake cook n' serve and make that with strawberry jello next...

    This is so simple and quick to prepare. Half the recipe is so low-cal, low-carb it's FREE as a dibetic serving. Made for Alphabet Soup Game. Thanks Marie, this is a keeper!
