Lemon Cooler Cookies

This is one of my favorite cookies. Sometimes I add some of the lemonade powder to the cookie dough and add more to the powdered sugar to make them very lemony.

50 cookies (change servings and units)

Ingredients

Lemon Powdered Sugar

  • 1 cup powdered sugar
  • 1/2 teaspoon kool aid unsweetened lemonade mix

Directions

    Preheat oven to 325°.
  2. 2
    In a large bowl, cream together: sugars, shortening, egg, vanilla and salt.
  3. 3
    Add the flour and baking powder.
  4. 4
    Add 1 Tbsp of water and continue mixing until dough forms a ball.
  5. 5
    Roll dough into 3/4-inch balls and flatten slightly onto a lightly greased cookie sheet.

    Bake for 15-18 minutes or until light brown.

    While cookies bake combine 1 cup powdered sugar with the lemonade powder in a large ziploc bag and shake to mix.

    Remove cookies from the oven and put them in the ziploc bag while they are still hot, shake until all cookies are coated.

These are great. They taste almost like the real thing. I followed her hints to add more lemonade powder to the dough and the powdered sugar. A keeper.

    Great recipe with some minor changes! We substitiuted lemon juice for the 1 TBS water and we added fresh lemon zest to the flour mixture. We didn't use the lemonade mix but added fresh lemon juice to the powdered sugar. My family can't stop eating them!

    Love them!! A quick & easy recipe with ingredients I always have on hand. (Well, I didn't have the cake flour but used Cake Flour Substitute & it worked great.) I used 1/2 tsp. lemonade mix in the dough and 1 tsp. in the coating. I didn't have any regular mix so I used pink lemonade mix with no problem. They were for company my mom was having and the lady just knew there was real lemon in them! My dad thought they were a bit too lemony but he ate about 5 so they couldn't have been too bad. :o) Will definitely be making again.

    This reminds me of the Lemon Coolers I used to eat when I was younger...they are light and have a touch of lemon zing to them. These got lots of comments when I made them for a crowd...they all thought the cookies had fresh lemon in them.
