Lemon Cilantro Rice Pilaf

A nice side dish with plenty of flavor when you don't want the same old plain rice.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat oil in nonstick sauce pan.
  2. 2
    Add rice and saute until rice kernels are opaque.
  3. 3
    Add water, grated lemon rind, lemon juice, turmeric and salt.
  4. 4
    Cover, reduce heat and simmer 15 minutes.

    Stir in green onions and cilantro.

I cut down the cilantro by half and it was perfect for us. I added more lemon too, as we love the lemon flavor. This was a most rewarding side dish with our grilled swordfish. We will have this again and again with other meat and fish choices, and I can't wait!

    Light and bright flavored, bursting with flavors. A welcome new flavorful side dish. Easy to make. Fills the room with citrusy aroma. Thank you for sharing this new favorite.

    Fresh and citrusy, but only with some adjustments to the recipe. After the rice was finished cooking, I added quite a bit more fresh lemon juice to the pot to give it that extra punch that I was expecting from the recipe. I did really enjoy the turmeric combined with the lemon. I will make it again.

    Beautiful rice dish. The colors are very striking with the bright yellow and greens from the onions and cilantro. I liked browning the rice, it gave a nice nutty flavor to the finished dish. Lovely flavor and the required amount of cilantro isn't overpowering. I served this with Island Chicken Wings #56872. Thanks!!!!
