Lemon Better Than Sex Cake - 2 Ww Points

This is a light, lemony cake. Perfect for a summer barbeque or picnic.

SERVES 24 (change servings and units)

Ingredients

  • 18 ounces lemon cake mix
  • 10 ounces diet Sprite
  • 1 egg white
  • 1/3 ounce sugar-free lemon gelatin
  • 7 ounces fat-free sweetened condensed milk
  • 8 ounces Cool Whip Free
  • 2 teaspoons lemon extract

Directions

  1. 1
    Mix Lemon cake mix, egg white and diet soda.
  2. 2
    Grease a 9x13 pan with non-stick spray. Pour cake batter into pan. Bake at 375 degrees for 35 minutes or until toothpick comes out clean.

    During the last few minutes of baking, put lemon jello and condensed milk in a sauce pan and stir on medium low heat until smooth.
  4. 4
    Take cake out of oven and poke holes all over the top. Pour jello mix over warm cake, filling in the holes. Cool completely.

    Mix 2 tsp lemon extract with cool whip. cover cake with cool whip mix.
  6. 6
    Place cake in refridgerator until ready to serve.

    If you love the taste of a real good lemon cake than this is the cake to try. I shared this with a few friends this weekend while at the lake and it was a huge success. We all loved this recipe! I didn't have a diet sprite so I used a regular sprite and I also didn't have a fat-free sweetned condensed milk so I used a regular one. Also added a touch of almond extract to the cool whip and lemon extract. Great flavor and a simple and quick cake to make. YUM!! Thanks for sharing the recipe! I am keeping this in "MY Family recipe cookbook" for safe keeping cause I know I will be making this recipe again

    KelBel I would like to make your cake again as I think I might have done something wrong. My cake was a bit dense and I think this was to be a lighter airy cake. I wont leave a star rating now but leave a remark as I chose your recipe for a tag game.
