Lemon Basil Pasta w/ Chicken

This is a tasty dish than can serve as a main dish with a nice soup or salad. Very economical. I made this a lot when I first moved out of my parents house.

SERVES 4 , 4 portions (change servings and units)

Ingredients

Directions

    Cook pasta according to package directions.
  2. 2
    Drain and return pasta to pan.
  3. 3
    In a small bowl, combine butter, lemon juice, basil, garlic, and pepper.
  4. 4
    Add chicken and mix with the pasta.
  5. 5
    Sprinkle cheese over the pasta and serve.
  6. 6
    Yield 4 servings.

This had a nice flavor but for us was too dry. I added a bunch of extra butter because I didn't know what else to do with it.

    I made this quite a while ago, when I first started cooking, and have continued since. It's simplicity made for a good starting point for me. It's delicious as is, though I've tried using shrimp, garlic instead of lemon (on request from a non-Lemon fan), and adding crushed red pepper to the butter mixture. Always great! Thanxs for this!

    Very easy to prepare, quick and tasty. I used 3 TBLS. butter, 1 TBLS. lemon juice, 2 small chicken breasts (cubed and sauteed in butter and garlic) and 8 oz. linguine. This made 3 decent-sized servings, so I think the recipe posted may not serve quite 4 people. This was very kid-pleasing too. Thanks for sharing!
