Leftover Mashed Potato Pancakes

This recipe was recently submitted to a news group to which I belong. I think it is very good and hope you like it, too. Preparation time in the kitchen is just a few minutes. When the big meal is through, this is a tasty way to use up the leftover mashed potatoes.

SERVES 2 (change servings and units)

Ingredients

Directions

    Mix all ingredients into mashed potatoes.
  2. 2
    Preheat skillet and add a couple of tablespoons of Crisco shortening or oil.
  3. 3
    Make sure the mix is not too thin.
  4. 4
    Pour 1/4 cup batter into hot pan; brown on both sides and enjoy with sour cream or applesauce.

    Enjoy!

I do a similar thing with our left-over mashed potatoes except that I throw in either a can of tuna or a cup of sweet corn kernels. They are delicious eaten cold as well.

    While my husband and I liked these, they didn't turn out as well as I had thought. I followed the directions to a T and it was not batter-like, so I could not pour it like it says to in the instructions. I ended up having to make them with my hands, which was fine, but not what I expected. I'll try this again, but will experiment with it until I get it the way I like.

    Great way to serve leftovers! DH raved about them. I used two eggs and added grated Parmesan. The Parmesan was a nice touch but next time I will only use 1 egg. Thanks for the recipe!
