I absolutely hate leftovers. The only way I can eat them is to use them in another recipe. This one is simple and the kids love it!!

SERVES 4 (change servings and units)

Ingredients

  • 1-2 cup cooked boneless beef roast, cubed (use leftovers)

  • 1 (10 3/4 ounce) can condensed vegetable soup
  • 2-3 tablespoons water

Directions

  1. 1
    Combine all ingredients in medium saucepan.
  2. 2
    Heat and serve over mashed potatoes.

My entire family loved this! I use the same amount of meat, 2 cans of veg. soup and a can of cream of mushroom. YUM! We had it on mashed taters, but it would be good on rice also. Great meal for the economy right now!
