Layered Tamale Pie

Recipe #97754 | 40 min | 25 min prep | add private note

I originally got this recipe from my Great Grandma Ce. But I came up with the layered idea. Originally there were no corn tortillas, and it was more like a sort of meat loaf pie. This recipe is interesting, very tasty, and kid-friendly too!

SERVES 8 , 1 Pie (change servings and units)

Ingredients

Directions

  1. 1
    Preheat oven to 350 degrees.
  2. 2
Heat oil in large skillet and add onions; cook until tender, but not brown.
  3. 3
Add beef, brown well and Drain.
  4. 4
Mix in the Taco Seasoning and 3/4 Cup water; let simmer for 5 minutes, uncovered, stirring frequently, until spice mixture is no longer runny.
  5. 5
Stir crushed tomatoes, corn, and cornmeal into the meat; mix well.
  6. 6
In an 9X9 round pyrex (or well greased metal) baking dish, place 4 of the 8 tortillas on the bottom, spread out, to cover the pan, add 1/2 of the meat mixture over the tortillas, and then 1/2 of the cheese.
  7. 7
Repeat this layering process, ending in cheese.
  8. 8
Place in oven to heat through, and melt cheese (about 25 minutes).
  9. 9
Cut into 8 pieces across, as you would a pie.
  10. 10
    Serve!

Delicious! I made this recipe based on breezermom's recommendation for the Top Favorites of 2008 Game. I made as posted except I did not have a round pyrex or cake pan so used a square 9X9 pan which was weird but my AZ kitchen is small. A friend called me when I was suppose to take this out of the oven, so my photo looks a bit dry b/c it was in the oven longer than 25 minutes. Thanks Juju Bee for posting.

I really liked this recipe! I made it exactly as written, except I discovered I didn't have enough crushed tomatoes so I added half a can of rotel with diced green chiles and cilantro. It made enough to fill a 2 1/2 quart casserole. I will make this again, possibly adding more green chiles or possible a jalapeno. Thanks for the great recipe!

Very good recipe. Even my picky DH ate it and asked for more! I only used 2 cups of cheese & it was enough. I tore the tortillas to make them fit my pan. I used a 9" round cake pan, and it was completely full. It cuts beautifully, and warms up nice, too. DH had to eat his as leftovers & didn't complain. Thanks for the recipe.
