Layered Taco Salad

No meat in this taco salad! My husband and I love this so much we often have it as a meal by itself! Regular Dorito's are sometimes hard to find but taste much better in this salad than Tostito's or other white-corn chips.

SERVES 4 -8 (change servings and units)

Ingredients

  • 1 head iceberg lettuce
  • 1 large tomato

  • 1 (15 ounce) can ranch style beans, drained and rinsed
  • 8 ounces cheddar cheese, shredded

  • 1 (11 ounce) bag dorito's corn chips

  • 1 (16 ounce) bottle seven seas green goddess salad dressing, chilled

Directions

  1. 1
    Tear up the lettuce and place in a large bowl.
  2. 2
    Chop the tomato and layer on top of the lettuce.
  3. 3
    Layer the drained and rinsed beans over the tomatoes.
  4. 4
    Layer the shredded cheddar over the beans.
  5. 5
    Crush the Dorito's and layer these over the cheese.
  6. 6
    Just before serving, cover the top of the salad with the Green Goddess dressing, spreading all over and to the edges of the bowl.

    I really enjoyed this along with some brussel sprouts for dinner! I used kidney beans, and made up some Green Goddess dressing. I used cheese Doritos. Thanks loof for a yummy dinner! I did scale the recipe in half.

    We reduced this to just 2 servings and enjoyed this for a light early supper. Ok, ya caught us. Yes, it was a snack! lol. We used Doritos nacho cheese and put them on the bottom of the casserole as we served it right after making it. We did not crush them, but used them as scoops. Next time I would put the beans (we used kidney beans) on the bottom above the chips as it's the denser of ingredients. The 7-Seas salad dressing goes great with this taco salad.
