Lagasse Scrambled Eggs

I never could get omelets right. One day I got frustrated and just scrammbled my omelet. After a couple dozen tries and many different ingredients later this is what I came up with. Hope you enjoy.

SERVES 1 -2 (change servings and units)

    Mix all ingredients together.
  2. 2
    Melt down a little bit of butter in a pan at half heat.
  3. 3
    Add egg mixture to pan and mix constantly as not to burn.
  4. 4
    Serve. I like to top off with some salsa and Tabasco sauce.
