Kraut Kuchen

My husband being Volga Deutsch, always talked about some of what he called Depression Meals while living home as a boy. Being from Northern Germany, I had never heard of Kraut Kuchen so this recipe came from his mother.

SERVES 12 (change servings and units)

Ingredients

  • 1 lb ground chuck
  • onion, chopped fine
  • 2 lbs cabbage, cut in small strips
  • 1 package hot roll mix
  • salt
  • pepper

Directions

  1. 1
    Saute onion with ground chuck in one frying pan and the cabbage in another.
  2. 2
    Salt and pepper to your taste.
  3. 3
    Let simmer until done and then drain well.
  4. 4
    Prepare hot dough mix.
  5. 5
    Divide into 12 equal amounts and roll dough extremely thin.
  6. 6
    Place handful of meat-cabbage mixture in center and fold corners into center.

    Set folded side down on a greased cookie sheet and bake at 350 degrees F until brown, 20 25 minutes.

they were so good, i made these as you said, but i added 4 cloves of garlic since we love garlic. it is a good recipe

    Haven't tried the recipe but is very similar or the same as "runzas> we hvae a recipe for a casserole that is even easier and better tasting/

    My Grandmother used to make these all the time when I was younger and I loved them. Only she called them Kraut Kukas. Never thought I would find the recipe thank you very much for sharing, it brings back memories of good times.

    These are oh so good. A family favorite and one of dh's specialties. When he makes them he separates the dough into 4 servings so the sandwiches are larger but I like them that way. In Nebraska these are known as Runzas and sometimes they add a slice of cheese before they seal them - I prefer them just the way the recipe reads however.
