Kiwi Quick Bread

My girfriend gave me a loaf of this delicious bread along with the treasured recipe. Here it is for you. Makes a wonderful tea bread and does it smell good while baking!

SERVES 10 , 1 loaf (change servings and units)

    Preheat oven to 350 degrees. Grease and flour a 9 X 5 X 3 loaf pan.

    Sift together flour, baking powder baking soda and salt and set aside.
  3. 3
    In large bowl cream butter and sugar together until light and fluffy. Add eggs one at a time to creamed mixture beating well after each one. Stir in kiwis. Fold in dry ingredients gently, stirring only until batter is completely moistened. Spoon batter into pan and bake for 55-65 minutes or until toothpick inserted comes out clean. Cool for 10 minutes on wire rack. Remove from pan and continue cooling on rack.

I bought a big container of kiwi and needed a way to use it up. This was really good. As another noted, needs a little more flavor... not sure what exactly... I may try it again and test out spices or maybe honey???

    Nice and pleasant, but felt it needed a little more flavor. I added vanilla extract, but think that next time I will double the kiwi content and possibly add a little cinnamon. Sweet and great texture, but needs a little more for my taste.

    How unusual to come across this recipe. I love sweet breads. This is a keeper. I took it to Sunday's get together and everyone asked for the recipe. I gave them this site and recipe # so hopefully you will have more fans trying it.

    Excellent bread!! I am chowing down on a warm piece right now...I couldn't wait for it to cool down all the way! It just smelled too good! Really enjoying it with my afernoon cup of coffee. Thank you for sharing!
