Drink up the health benefits of fresh tangy kiwi fruit in this deliciously sweet cocktail with just a hint of creamy coconut.

SERVES 1 (change servings and units)

Ingredients

  • 1 kiwi fruit
  • 1 cup pineapple juice
  • 1/2 teaspoon shredded coconut, plus extra
  • shredded coconut, to garnish

Directions

    Peel the kiwi fruit, cut into chunks and place in a blender. Add the pineapple juice and coconut and whiz until smooth.

    Serve garnished with a little extra coconut sprinkled on top.
