Kittencal's German Apple Puff Pancake

This is a recipe I developed years ago, a small amount of baking powder is what makes this recipe special! it's a family favorite and takes very little time to throw together, I sometimes just bake the complete recipe in a 10-inch round cake pan, but two smaller pans will do fine also, you will love this!

SERVES 4 (change servings and units)

Ingredients

  • 4 tablespoons butter, divided (one more tablespoon butter won't hurt)
  • 4 large apples, peeled and sliced
  • 3/4 cup flour
  • 3/4 cup milk (or use half and half cream)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 tablespoon sugar (optional or to taste)
  • 4 large eggs
  • 1/3 cup sugar (can use 1/2 cup sugar)
  • 1 teaspoon cinnamon (or to taste)

Directions

    Set oven to 400 degrees F.

    Spray two 8-inch round cake pans with cooking spray.
  3. 3
    Place 2 Tbsp butter in each of the pans.
  4. 4
    Place the pans in the oven and bake until the butter has melted; remove from oven.

    In a bowl, beat the flour, 1/4 teaspoons baking powder, sugar (if using) salt, milk and eggs until smooth, then allow to stand for 30 minutes.

    Arrange the apple slices into the two pans onto the melted butter.

    Re-whisk the flour/egg mixture again then divide the batter evenly between pans, over the apple slices.

    Mix the sugar and cinnamon; sprinkle over the batter in each pan.

    Bake until puffed, and golden brown, about 20-25 minutes.

Oh Kitten, you've done it again. Anytime a recipe has your name on it I know it's gonna be good! I used about 6 medium sized apples from our tree and baked them in 2 8-inch pans and they turned out BEAUTIFULLY! The top was divine, almost like a snickerdoodle. My kids gobbled it up! Thank you!

    I really enjoyed this recipe. There is a breakfast place where I grew up that I visited periodically just to have this. I really missed that pancake when we moved away. Now I don't have to miss it, I can make it at home, and it is easy!

    SO GOOD!! ...and really EASY too!! We enjoy this every time we make it. I've made it for Easter Brunch even. Today I made it with pears instead of apples, which was just as good!

    Wonderful Apple Puff Pancake! Our family loves puff pancakes but wanted something special for our Christmas morning breakfast. It received a "Yummy!" response from all. I used 1/3 cup sugar with 1 t. cinnamon for the topping split between the two pans but would probably reduce to 1/4 cup with 1/2 t. cinnamon next time as it tasted just a little too sweet for me (but no one else minded a bit). I did include the 1 T. sugar in the batter as directed. Used Gala and Granny Smith apples that we had on hand. Thanks Kittencal!
