Kittencal's Easy No-Fail Make Anytime Turkey Gravy

I have been using this recipe for many years, my family loves this gravy and I have served it to dinner guests over the holidays and always receive rave reviews! --- you don't need to make this gravy using all pan drippings, if you do not have 4 cups of drippings you may mix with chicken broth to make the 4 cups, or it may be made with only chicken broth, please see note on the bottom of the recipe--- this may be made slightly ahead and kept uncovered on top of the stove until ready to serve, just whisk before using If you have any left over this gravy freezes very well or you may reduce all ingredients down to half --- this gravy and of coarse any gravy is at it's best when used right away! --- also see my Kittencal's Easy Make Anytime Fat-Free Gravy

5 cups (approx) (change servings and units)

Ingredients

  • 1/2 cup butter (you can use margarine)
  • 1/2 cup flour
  • 3 tablespoons flour
  • 1/2 teaspoon black pepper (more is better, I use freshly ground pepper)
  • 4 cups pan drippings (or see options below the recipe)

Directions

  1. 1
    Drain the pan drippings for the roasted turkey through a fine strainer.
  2. 2
    Let sit and then remove any fat from the top of the drippings.
  3. 3
    Add in chicken broth or water to make 4 cups if necessary.

    In a medium saucepan, melt margarine or butter.
  5. 5
    Add in lots of black pepper.
  6. 6
    Add in 1/2 cup flour plus 3 tablespoons; constantly whisk for about 3 minutes over low heat.

    Slowly add in the 4 cups turkey broth/drippings; whisk constantly over medium-low heat until bubbly and thickened (about 3 minutes).

    **OPTIONS** to make this gravy using all chicken broth prepare as directed using 4 cups low sodium chicken broth and 1 tablespoon chicken boullion powder ---- or you may add in low sodium chicken broth omitting bouillon powder to pan drippings to make up 4 cups.

I made this recipe on 6/14/09 with the drippings from Roasted Turkey Breast With Zesty Dry Rub. And I did make a mistake with this recipe, I only made half .The recipe was sort of made as written, I used 1 cup of drippings. And then added 1/2 cup chicken broth and the rest water.Proceeded with the rest of the recipe as it was written. And have to tell you, this is some of the best gravy. I will make this recipe anytime turkey gravy is needed. Thanks for posting and, " Keep Smiling "

    I made Crock Pot Turkey Breast and had 4 cups of lovely stock left in the crock pot which I originally was going to use for soup. The weather changed and I decided to make turkey croquettes but wanted gravy over it. I went directly to Kitten's recipes to see if she had a turkey gravy recipe because I knew it would be great as are all the recipes I've tried of her's. I wasn't wrong! It was fantastic on the croquettes. Very good directions made this easy to make and the results were delicious. The remaining gravy is in the freezer to use for another meal.

    Loved this gray. Very tasty. Was a tad to thick, but, adding the water helped to thin it out. Really good flavor. Did add some sage and thyme cause I like these spices in my gravy.
