Kittencal's Basic Brown Sugar Brine for Meat and Poultry

This is a basic recipe that allows just the flavor of the meat to shine through, feel free to add in herbs if so desired, This is great to use on chicken or turkey pieces before grilling, make certain that your meat is fully covered in the brine, double or triple the recipe if needed, use kosher salt only for this brine

4 1/4 cups (approx) (change servings and units)

    In a bowl mix together the brown sugar and kosher salt in water until thoroughly mixed (no granules should remain in the water).

    Pour the mixture over meat making certain to cover completely.
  3. 3
    Soak the meat for 6-24 hours.
  4. 4
    Wash meat thoroughly under cold water before cooking.

Used with bone in chicken breasts and grilled. Didn't need to add any sauce, chicken was moist and delicious. Everyone asked what my "secret" was..thank you for posting!

    I made this as written and had a juicy chicken as expected though not as favorful as I would have hoped - that may be the fault of the chicken itself though I suppose. Accordingly I'll give the benefit the benefit of the doubt and rate it a 4 instead of a 3. This recipe is a distant second to Kittencal's other brown sugar brine...will not make this version again.

    I used this for a turkey breast cooked in my crockpot. Between the brine and the cooking method, the meat was fabulous. Moist and falling off the bone tender, it will be just perfect for dinner and the sandwiches to come. Thanks!

    This was great on grilled chicken quarters! I doubled the recipe, and brined for 20 hrs. Yum, can't wait to try it on pork!
