Kielbasa and Potatoes

This recipe is quick and easy and delicious.

SERVES 2 -4 (change servings and units)

Ingredients

    In a pot that will comfortably hold all ingredients, brown sausage (1 inch pieces or smaller) with chopped onion.

    The more you brown them, the better it will taste.
  3. 3
    Don't worry about a little bit of charring.
  4. 4
    Toss in peeled, cut potatoes and cook slightly to coat potatoes with juices.
  5. 5
    Add enough water to not quite cover potatoes.
  6. 6
    Salt lightly.
  7. 7
    Cook until potatoes fall apart with fork and the liquid has thickened, stirring occasionally.

This is a wonderfully easy recipe when you want something hearty without a hearty effort. I added some Southwest seasoning while browning the sausage and onions to give it a little kick. I also used the recommendation to use chicken broth in place of the water and found it to add a really nice flavor. Thanks for posting this, I've made it several times nice. So easy I don't even need to look the recipe up any longer.

    I love how easy this is and that its made with things I always have on hand. My family devoured it, even my pickiest. This will be eaten many times. Thanks for a great recipe that works for busy families.

    So simple and so good! I used a smoked chicken-apple sausage (Sam's Club) and redskin potatoes sliced but not peeled. I added chicken broth instead of water. And the results were fantastic. The sauce was thick and everyone just loved the whole dish.
