Kid Pleasin' Teriyaki Chicken

Having lunch problems? You're worries are over! I am the pickiest kid in America about lunches. This recipe satisfies my mom and me. However my friends weren't as happy, a sandwich just doesn't compare to this dish... Double the sauce ingredients to have lots to go around!

SERVES 10 (change servings and units)

Directions

    Marinate chicken slices with 1-2 teaspoons soy sauce, while assembling sauce ingredients in blender or by hand.

    Heat oil in large frying pan or wok over high heat.
  3. 3
    Saute chicken about 2 minutes or until cooked.
  4. 4
    Add sauce and bring to boil.
  5. 5
    Stir until thickens (just a couple of minutes).
  6. 6
    Serve with Steamed white rice and garnish with chopped green onions.

    Excellent, and as a bonus it uses things I almost always have on hand. I cut the garlic and chicken amounts in half, but kept everything else the same. I used apricot jame with wonderful results. Maybe because I used an all-fruit jam, with no additional sweeteners I didn't find it too sweet at all. I served it with sauteed zucchini, red pepper and onion on a bed of jasmine rice. (And of course sriracha-because I'm hopelessly addicted to spicy food) Thanks!

    I second that this should have more stars. I did have to half the recipe though for smaller meal but this is truly a great recipe.

    Made & reviewed for the Kid Friendly Forum's Recipe of the Week. I'm trying to catch up on all my reviews & this one has been a while coming! My whole family enjoyed this dish very much. It is quick & easy to put together & really tasty - what more can you ask for? I left out the sherry but other than that, stuck to the recipe. Thanks Cricket*
