Kicked up Baked Sweet Potatoes

They serve these at a local restaurant here in TX. This is NOT a casserole! These guys are dressed for dinner in their best jackets! The WHOLE potato, baked and split like a white baked potato. You just gotta try these to believe how simple and delish they really are! Enjoy!

SERVES 4 (change servings and units)

Ingredients

Directions

    Wash sweet potatoes and prick with a fork.
  2. 2
    Microwave potatoes for about 5-7 minutes or until soft OR bake in a 350 degree oven for about 1 hour or until soft.

    Mix spices together and set aside.
  4. 4
    Make a slit in the potato just as you would for a regular baked potato.
  5. 5
    Insert 1 tsp butter into each and sprinkle with the spice mix.
  6. 6
    Fluff meat of sweet potato to mix in butter and spices.
  7. 7
    Feel free to adjust the amount of spices and butter to your liking.

I usually have sweet potatoes with butter/brown sugar/cinnamon but the addition of the extra spices in this recipe is really nice. I did add about 1/4 cup brown sugar. Also, I was under the impression that sweet potatoes were best when baked at a low temperature for, well, all day, but these turned out perfect at 350--I had to bake mine for 1.5 hours (old oven). I'll use this spice combo from now on; the quanity if perfect for 4 potatoes.

    I usually have sweet potatoes with butter and a sprinkle of salt, but I enjoyed this recipe. Even better, try a big dollop of sour cream on top!! I don't like the sweetened version

    Love this blend of seasoning on the sweet potatoes! I found though, that gosh darn, I love a sweet, sweet potatoe- so I ended up adding 1/3 cup of brown sugar to the seasoning mix. I'm telling ya, it's soooo great!!

    I had never heard of doing a sweet potato any way other than frying, baking (adding brown sugar and butter, only) or stewing, or the casserole, but this is an excellent change, will definitely do it again.
