Kellys Moms Rhubarb Sauce

This is from a friends mom who always made me feel so welcomed in her home. Thanks Margaret! Best with fresh rhubarb and so easy. Good with a dusting of cinnamon too.

SERVES 4 -6 (change servings and units)

Ingredients

  • 3 cups rhubarb, cut in 1 to 1 1/2 inch pieces
  • 2 cups sugar
  • 2 eggs, beaten
  • 2 tablespoons melted butter
  • 3 slices bread, torn

Directions

  1. 1
    Put 1/2 of melted butter on bottom of 8x8 pan.
  2. 2
    Mix up all ingredients and pour into pan.
  3. 3
    Bake 350 for 1 hour.
