Kelly's Blueberry Banana Bread

NOT bragging, but everyone says this is simply the best banana bread they've ever had. Blueberries are one of my FAV fruits and I put them in everything!I LOVE to make it, especially since it makes 2 loaves. We keep one and always give the other one away.

2 loaves (change servings and units)

Ingredients

Directions

    In large bowl, mix all ingredients except blueberries for about 30 seconds.

    Fold in frozen berries.
  3. 3
    Pour into 2 greased 8 1/2x4 1/2x2 1/2 loaf pans that have been greased on the bottoms only.

    Bake in 350º oven for 55-60 minutes, til toothpick inserted in center comes out clean.

    Cool slightly, loosen sides with knife from sides of pan, turn out onto rack to cool.

    When cool, wrap tightly with plastic wrap, keep refrigerated.

    Best the next day!

    *Ialways bake blueberries frozen in breads and muffins so they hold up perfectly, and you don't end up with a hollow blue hole, lol.

Very yummy. . .thanks Kel! I have had this in the to-do pile all summer and today was the lucky day. I ate 2 pieces, gave 1/2 a loaf to the mo-in-law and am giving 1 loaf to the neighbors as a thank you gift for watching our cat while we were away. The blueberries are so yummy! I did sub Splenda for the regular sugar with great results, otherwise made it as written. I will decrease the vanilla to 1 tsp next time, as I am becoming less and less a vanilla fan as time goes by. . .who knows!!!! THANKS again!

    Excellent! I am not a fan of banana bread. But I had bananas calling to be baked. Came here on zaar looking for the perfect bread and I found it! The blueberries sure does make it! Not to forget the crunch from the walnuts that I used in place of the pecans, (what I had) and did use buttermilk in place of the milk. We just ate it hot and it was delish. I can`t wait till tomorrow to have a better the next day slice! Thanks

    I really loved this bread! I have already been on the phone sharing this recipe with my friend! This bread is so moist and so easy to make! I did leave out the coconut and the nuts because we do not like them. I also used FROZEN blueberries and the bread turned out perfect. I would like to make mini loaves of this and give as Christmas presents!! Thanks so much for sharing, Wildflour!

    Sorry, I'm not giving the second loaf away! It's just too good! I love the hint of cinnamon and the pecans, and the lower fat content is a real bonus. The only change I made was to leave out the coconut. Thanks, Wildflour. This is a keeper
