Kale and Ginger Stir Fry

Ginger and soy sauce give this dish an Asian flair. You may substitute spinach or bok choy for the kale.

SERVES 1 (change servings and units)

Ingredients

Directions

    In a medium skillet, cook the ginger root in oil, stirring, over medium heat for 1 minute.

    Add the kale and raise the heat to medium high.
  3. 3
    Add the soy sauce and water, and stir-fry until the kale is wilted but still slightly crunchy, about 3 minutes.

    Sprinkle with sesame seeds.
  5. 5
    Serve warm or cold.

    You may substitute spinach or bok choy for the kale.

    Enjoy!

This was a quick and tasty way to prepare kale. I doubled the recipe and used olive oil in place of the safflower oil. Thanks Sharon for another great recipe.

    I love kale and this is a nice and easy recipe. The toasted sesame seeds add a good flavor boost. I use peanut oil for cooking to add a little more flavor.

    Very flavorful and easy to make. I used half olive oil half sesame oil for more sesame flavor. If you like toasted sesame seeds they're a must! They add sooo much flavor. Thank you so much for posting! I love kale and am always looking for different ways to prepare it.
