Kahlua Coffee Ice Cream

    In a medium saucepan, combine the cream, milk, sugar, Kahlua and espresso powder.

    Bring to a gentle boil over medium heat. Remove from the heat.

    In a medium bowl, beat the egg yolks until thickened.
  4. 4
    Whisk 1 cup of the hot cream into the egg yolks.
  5. 5
    Gradually add the egg mixture in a slow, steady stream, to the hot cream.

    Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5 minutes.

    Remove from the heat and strain through a fine mesh strainer into a clean container.

    Cover with plastic wrap, pressing down against the surface to keep a skin from forming.

    Refrigerate until well chilled, at least 2 hours.

    Remove from the refrigerator and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. Transfer to an airtight container and freeze overnight until very firm.

This is beyond delicious! I used Folger's Crystals instead of the expresso powder, and added some mini chocolate chips at the end of the churn cycle. I love the flavor of coffee but can't STAND hot beverages - they just make me thirstier, so this is, to me, just perfect! Thanks for posting!

    I was looking for a good way to use up some kahlua so I made this to accompany Chocolate Kahlua Cake. Warning: you must love coffee in order to enjoy this! I made this for a family birthday party and everyone was raving about it, going back for seconds and thirds! The combo with the cake (warmed up) was excellent. The only addition we made was to stir in 1/4 cup chocolate shavings just before the ice cream machine was done churning. Awesome!
