This is a excellent Tomato Salad , Perfect for hot summer days with Grilled Dishes. You can vary this recipe , try finely sliced shallots for the onion or even lime juice for the lemon, or add a teaspoon of dijion-style mustard to the dressing.Make this salad just before serving.This Recipe came from a fab Book called "The Best of India"

SERVES 4 -6 (change servings and units)

    Heat a small skillet over med-high heat.
  2. 2
    add the cummin seeds and toast stirring constanly for 20-30 seconds.
  3. 3
    Transfer to a plate and allow to cool.
  4. 4
    In a large salad bowl, whisk the oil, vinegar ,and lemon juice until blended.
  5. 5
    add the garlic, onion, tomatoes, cucumber, pepper and salt to taste: toss very well.
  6. 6
    Sprinkle with the cumin seeds and mint, toss well, toss again, and serve.

    I can't believe I never wrote a review for this! I've made this salad about 6 times since finding the recipe and my boyfriend & I love it! We stick to the recipe minus the cumin seeds (we don't have them) and the mint, since we usually don't have it on hand. This is a great, refreshing, summer salad to use up those tomatoes and cucumbers from the garden. We've had it with Indian dishes, steaks, burgers, you name - it goes with them all! Thank you SO much for a great one!

    This is so good, quick to put together and can be eaten right away. I used white wine vinegar (I can't stand the red stuff) and it was really tasty. I'll make this again for sure. Thanks!

    An excellent salad to go with our Indian style meal tonight. I also used white vinegar as I had no red, and I omitted the garlic as it can be a bit harsh in a freshly made and eaten dish (besides I'd used about 16 cloves in my other dishes).
