Just Peachy Spinach Salad

Sweet peaches, crunchy nuts, and tangy vinaigrette. After being on a strawberry spinach salad kick lately, I thought it would be fun to vary the ingredients a little and this is what resulted. Hope you like it as much as I did.

SERVES 4 (change servings and units)

Directions

    Make the vinaigrette: Using a whisk, combine mustard, vinegar, olive oil, garlic and sugar in a small bowl, and set aside.
  2. 2
    Either in a large serving bowl or in 4 individual serving bowls, arrange spinach, onion, peaches and pine nuts.
  3. 3
    Drizzle with vinaigrette just before serving and sprinkle with cracked black pepper.

I liked the interesting ingredients, but the balsamic vinegar was too much for my liking (perhaps if you are more of a balsamic lover??). Sorry, but it was an interesting change of pace.

    Yummy!!! I used a mango instead of peaches, and almonds instead of pine nuts. This ones a keeper, I love the dressing!

    This is very, very good! I added Almonds instead of Pine Nuts, and added Red and Yellow Peppers. We all thought it was just great. The dressing is very tasty. Thanks for the great recipe Canarygirl! Much appreciated!

    What a wonderful salad and dressing combo, it is perfect! I used baby spinach, and doubled the dressing (but did not need it all). I used dijon whole grain mustard and added young snow pea shoots. the sliced peaches and dreessing flavours together really make it! I did take a pic, and will post soon!
