Joshua's Favorite Tilapia With Jasmine Rice

This is my very own creation, I whipped this up one day quite by accident. I call this Joshua's favorite Tilapia, because my husband (like me) could eat this 7 nights a week if we could. This is the easiest way to cook Tilapia, and if you are watching those calories then you need not worry this is extremely low fat, oh and did I mention TO DIE FOR !!! This recipe is SIMPLE with FEW ingredients, but has the potential to add what ever you want. I like it AS IS !

SERVES 2 (change servings and units)

Ingredients

  • tilapia fillets
  • fat-free Italian salad dressing (I use Wishbone)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon Old Bay Seasoning
  • 1/4 teaspoon cumin
  • 2 1/2 cups water
  • 1 tablespoon margarine or butter
  • 1 cup jasmine rice (uncooked)

Directions

    Pour your dressing straight from the bottle into the pan, I usually make sure the bottom is covered but not too much, I gave approximate measures here.

    Place the fillets on top of the dressing in the pan.
  3. 3
    Sprinkle with all 4 seasonings (all the measurements I gave are approximate). I usually just sprinkle a generous amount on each filet. Don't leave out the cumin it is a wonderful addition to the fish.

    Saute the fillets on med-low heat approximate 4-5 minutes each side until fish flakes easy with a fork.

    While the fish is slowly cooking, cook the rice, using 2 1/2 cups water and 1 cup rice, with butter, bring to a boil and simmer 15 minutes on low.

    Serve the fillet on top of the Jasmine rice. I will usually add more s&p and cumin according to my taste.

    OH MY!!! Here is my story in regards to Josh's Tilapia. So my DH & I have been trying to eat semi-healthy. There was a sale on tilapia at the supermarket. Bought the tilapia. Went to the Zaar in search of a recipe, and found this. Now, I was looking for something good, because my husband DISLIKES fish, but in our pursuits of health, he agreed to eat the tilapia. AND BOY WAS HE AMAZED!!! He absolutely LOVED this! And so did I! We were wowed! And since I made this, he has asked for it again! HA! This was very simple to make. Don't be worried that you don't have an exact measurement for the Italian dressing--it all works out! I upped the cumin and skipped the Old Bay Seasoning because I didn't have any. This is a keeper recipe. And not only a keeper, but one I would definitely serve to guests! THANKS!

    Yum! Shirl, you're right, this is to die for. It's one of those recipes that's super easy but so delicious that you could serve it to company and they'd never know your secret. I made this using 2 haddock fillets because that's what I had on hand and it worked out wonderfully. The amounts of the spices were just right (I measured the Old Bay and cumin but just eyeballed the salt and pepper). I didn't make the rice this time because I had some white bread I wanted to use up, but I'll definitely try it next time because it sounds like a great pairing. I can't wait to make this one again. I bet it would excellent with other FF dressings and spices, too. I can't wait to experiment!
